Brava, Rebecca. This is a good article packed with useful advice! As someone with Celiac Disease, I not only found lots of GF product in Italy, it was also especially good. Even in the states, some of the best Gluten Free products are from bella Italia :-)
There are lots of wonderful recipes using chestnut flour also of course polenta and wonderful soups. The main problem for celiacs is breakfast in the bar.

Great article! My mom has Celiac and I finally took her to Italy this spring; she had a blast! We even did a cooking class in Bologna where they adapted everything, it was amazing!
Hi, great article. My biggest challenge in Umbria was finding actual restaurants with a wide varierty of gluten-free food. My favourite discover for GF food in Umbria was Ristorante Pegaso, a family-run restaurant that makes absolutely delicious home-made (gluten-free, of course) pasta. It has a full GF menu and is certified by the Italian Celiac’s Association. It belongs to a hotel run by the same family and is just outside Perugia.
